Breakfast egg muffins – quick, delicious and high in protein

These little power muffins are the perfect way to start your day! Packed with protein, fresh vegetables, and cheese, they’re quick and easy to make and taste delicious both warm and cold.

 Ingredients (makes 6):

• 6 eggs

• 100 g grated cheese (e.g., Cheddar or Gouda)

• ½ bell pepper, diced

• ½ onion, finely chopped

• 1 tomato, diced

• 2 tbsp milk

• Salt and pepper to taste

• 1 tsp dried thyme (optional)

• 6 muffin cups
