🥔 Cheesy Potato Patties
🧾 Ingredients
2โ3 cups mashed potatoes (cooled)
1 cup shredded cheese (like mozzarella or cheddar)
2 eggs
ยฝ cup breadcrumbs (plus extra for coating if needed)
2โ3 tbsp chopped fresh parsley (or green onions)
Salt & pepper to taste
Oil or butter for frying
👩🍳 Instructions
Mix everything
In a bowl, combine mashed potatoes, cheese, eggs, breadcrumbs, parsley, salt, and pepper.
Mix until it forms a soft dough.
Shape
Take small portions and form into round patties (about 1โ2 cm thick).
Chill (optional but helpful)
Place patties on a tray and chill in the fridge for 15โ20 minutes to firm up.
Cook
Heat oil or butter in a pan over medium heat.
Fry patties for about 3โ4 minutes per side until golden brown.
Serve
Serve hot with sour cream, yogurt dip, or ketchup.
💡 Tips
If the mixture is too soft, add more breadcrumbs.
You can stuff the center with extra cheese for a gooey middle.
Works great with leftover mashed potatoes!
