Ingredients

Main Ingredients:

  • 2 medium zucchinis (about 1 lb)

  • 1 tbsp olive oil or butter

  • 1 cup shredded cheese (mozzarella, cheddar, parmesan, or mix)

  • Salt and black pepper, to taste

Optional Add-Ins:

  • 1 clove garlic, minced

  • ½ tsp Italian seasoning or oregano

  • ¼ tsp paprika or chili flakes

  • Fresh parsley or basil, for garnish


Instructions

  1. Slice the zucchini:
    Wash, dry, and slice zucchinis into ¼-inch rounds or diagonals for more surface area.

  2. Salt and dry:
    Sprinkle lightly with salt and let sit 5–10 minutes to release moisture. Pat dry with paper towels.

  3. Heat the pan:
    Warm olive oil or butter in a large nonstick skillet over medium heat.

  4. Pan-fry:
    Add zucchini slices in a single layer (don’t overcrowd). Cook 2–3 minutes per side until golden and crispy around the edges.

  5. Add the cheese:
    Reduce heat to low. Sprinkle shredded cheese over the zucchini, cover with a lid, and cook for 1–2 minutes until melted and bubbly.

  6. Serve:
    Transfer to a plate, garnish with herbs or chili flakes, and serve hot while the cheese is melty and gooey.
