Apple cake

1/4 cup orange juice

2 1/2 tsp vanilla extract

Preparation:

1. Preheat oven to 350°F (175°C). Grease and flour a Bundt pan to prevent sticking.

2. In a bowl, combine the apples with the cinnamon and 1/2 cup of sugar. Let stand to allow the flavors to meld.

3. In a separate bowl, sift together the flour, baking powder, salt, and the remaining 2 cups of sugar.

4. In another bowl, beat the eggs with the oil, orange juice, and vanilla until smooth.

5. Gradually add the wet ingredients to the dry ingredients, mixing gently until just combined.

6. Pour one-third of the batter into the prepared pan, then add half of the apple mixture. Repeat this layering process, and top with the remaining batter. For a decorative touch, arrange a few apple slices on top.
