Directions:
1. Begin by preheating your grill to a medium-high temperature.
2. Take your chicken or steak and season it with chili powder, cumin, salt, and black pepper. Grill this for approximately 2-3 minutes on each side, or until it is fully cooked.
3. To create the Pico de Gallo, mix together diced tomatoes, red onion, jalapeño (if you choose to use it), cilantro, lime juice, salt, and pepper in a bowl. Make sure to toss the ingredients well to combine.
4. For the Chipotle Aioli, whisk together mayonnaise, chipotle pepper in adobo sauce, minced garlic, lime juice, salt, and peffer in a separate small bowl.
5. To assemble your burrito bowls, distribute the cooked rice among individual bowls. Add the grilled chicken or steak on top, followed by the freshly made pico de gallo and some chopped cilantro. Finally, drizzle the Chipotle Aioli generously over the top.
