Instructions

Slice the zucchini:
Wash, dry, and slice zucchinis into ¼-inch rounds or diagonals for more surface area. -
Salt and dry:
Sprinkle lightly with salt and let sit 5–10 minutes to release moisture. Pat dry with paper towels. -
Heat the pan:
Warm olive oil or butter in a large nonstick skillet over medium heat. -
Pan-fry:
Add zucchini slices in a single layer (don’t overcrowd). Cook 2–3 minutes per side until golden and crispy around the edges. -
Add the cheese:
Reduce heat to low. Sprinkle shredded cheese over the zucchini, cover with a lid, and cook for 1–2 minutes until melted and bubbly. -
Serve:
Transfer to a plate, garnish with herbs or chili flakes, and serve hot while the cheese is melty and gooey.
