Ingredients (serves 4, double for 2 more):
• 2 pounds baby potatoes
• 1 cup heavy cream
• 2 cloves garlic, minced
• 1 teaspoon fresh thyme leaves, plus some for garnish
• 1 cup shredded cheddar cheese
• 1/2 cup shredded Parmesan cheese
• Salt and pepper to taste
• Butter for greasing the baking dish
Instructions:
1. Prepare the potatoes:
• Wash the baby potatoes thoroughly and cut them into even halves or slices, depending on how large you want the pieces to be. It’s not necessary to peel the potatoes, as the skins will soften nicely during baking and add flavor.
2. Prepare the cream sauce:
• In a small saucepan, gently heat the cream over medium heat. Add the chopped garlic and fresh thyme leaves and simmer for about 2-3 minutes to allow the flavors to develop. Season to taste with salt and pepper.
