BBQ Layered Salad Cake

 Ingredients

Base layer

2 cups cooked pasta (small shapes like macaroni or fusilli)

2 tbsp olive oil

Salt & pepper

Creamy dressing

1 cup cream cheese (softened)

½ cup Greek yogurt or sour cream

1–2 tbsp mayonnaise

1 tsp lemon juice

Salt & pepper

Layer fillings

1 cup cherry tomatoes (halved)

1 cucumber (small dice, seeds removed)

1 cup shredded carrots

½ red bell pepper (diced)

½ cup sweet corn

½ red onion (very finely chopped)

1 cup shredded lettuce

Optional add-ins:

Grilled chicken pieces

Cooked bacon bits

Feta cheese cubes

Avocado slices

 Instructions

 Prepare the base

Mix cooked pasta with olive oil, salt, and pepper.
Press firmly into the bottom of a springform pan lined with parchment paper.
